One of the best things about being in this industry is getting to meet people who have such a passion for the liquids they produce. I had met Hugh Sisson, founder and brewmaker at Heavy Seas Brewery in Baltimore once before, but hadn’t had the opportunity to relax and talk about beer with him. On Wednesday night at a beer dinner at Red Stripe in Providence I got to pick his brain on a variety of topics including where the beer industry is going and just how much time and effort it takes to be successful at making beer.
Hugh said, “I can’t say that everything we’ll make will be a homerun, but I can say that it will be well-made.” I love the confidence he has and the love for sharing his creations.
The best pairing was braised short ribs with the Heavy Seas Blackbeard’s Breakfast Bourbon Barrel Aged Porter brewed with coffee. The sweetness of the bourbon ale was amazing with the richness of the sauce. Truly great. Thank you, Hugh, for all you do for beer lovers everywhere!
